Ingredients required to make Carrot Halwa:

2 kg fresh carrots

2 tbsp desi ghee

2 liters full cream milk

250 grams Mawa

250 g sugar

50 grams almonds chopped

50 grams cashew nuts chopped

50 grams raisins

8-9 small cardamom crushed

Method for making Gajar Ka Halwa:

  1. To make Gajar Ka Halwa, here we have to take 2 kg of carrots and keep peeling the carrots and putting them in water. Now we have to wash the carrots after mashing them properly, there should not be any soil left. Because carrot lives in the soil in the ground, so clean the soil carefully.
  2. After washing the carrots well, grate the carrots with the help of a grater. When all the carrots are cooked, then we have to take a heavy bottomed pan and heat it by adding 2 tbsp ghee to the pan. When the ghee becomes hot, put grated carrots in it.
  3. Now roast the carrots on high flame for 2 minutes and then cover and keep it on medium flame for 10 to 15 minutes to cook. And keep stirring it in between so that it does not stick.
  4. Look at the carrot when there is absolutely no water left in the carrot. When all the water dries up, add 2 liters of full cream milk and 250 grams of mawa to the carrot and cook it on medium heat.
  5. Now you have to keep stirring it in between because the milk gets fried quickly. When it becomes thick after cooking, keep stirring it continuously on high flame.
  6. Now add 250 grams of sugar in it and cook till the sugar dissolves. When the sugar dissolves, add chopped nuts and crushed cardamom to it. And cook well on medium heat. When the look of halwa starts coming while cooking, then it has to be taken off.
  7. Now you have to put some chopped dry fruits on top of it in a vessel. Now your pudding is completely ready. Now you like hot or cold pudding, you can taste it according to your taste.
